Founded in 2001 by Hussni Ajlani, Salmontini was established with a singular vision: to elevate the dining experience by showcasing the finest smoked salmon the world had to offer. This wasn’t just any garden variety smoked salmon. It was hand-sliced, oakwood smoked and delicately cured using age-old techniques passed down through generations in Scotland. The kind of product that whispers its quality the moment it meets your palate.

Raised in Switzerland, Hussni brought with him a deep appreciation for precision, quality, and the culture of excellence. Inspired by a single bite of traditionally-smoked Scottish salmon, he knew he had discovered something extraordinary – what he then referred to as a “hidden treasure’. That single bite set him on a mission to share this experience with the world, beginning with the launch of Salmontini Le Resto in the heart of Beirut.

What started as a fine dining destination inevitably evolved into something more. Today, Salmontini is a family of culinary concepts including Le Resto in Dubai’s Mall of the Emirates, and Le Bistro in DIFC and Abu Dhabi. Each one reflects the original vision: premium ingredients, timeless technique, and warm, elegant hospitality.

But the star of our story remains our signature Scottish smoked salmon – delivered fresh from the Shetland Isles, cured and smoked with care, and meticulously sliced by hand with passion and precision. It’s the product that built our reputation and continues to define our brand.

Yet Salmontini has never been just about salmon. Our menus offer a rich variety – from Alaskan Black Cod and Entrecôte St. Germain to delicate sushi rolls and vibrant desserts, each dish prepared with the same reverence for quality and balance.
